Ingredients

Chicken Marination
2 pound(approx 1 kg) Chicken Breast Boneless cubes
4 tablespoons Olive Oil Extra Virgin
1 lemon(2 tablespoons) Lemon Juice
3 Garlic Cloves Minced
1 Tablespoon Dried Oregano
1 Teaspoon Dried Rosemary
1 Teaspoon Salt
1/2 Teaspoon Black Pepper
1/2 Teaspoon Red Chili Flakes
10 Wooden Skewers
Tzatziki Sauce
1 Cup Plain Greek Yogurt I use whole milk Greek yogurt, you can use Fat Free if you prefer.
3/4 Cup English Cucumber Shredded
1 Lemon Lemon Zest
a pinch, each Salt and Pepper
2 Garlic Cloves Minced
1 Tablespoons Olive Oil Extra Virgin
For Serving
Hand full Black Olives
4 Pita Bread toasted on the same grill after chicken skewers are done.
1 Red Onions sliced
1 Tomato sliced
Garnish
2 Tablespoons Chopped Parsley
to squeeze on skewers Lemon Juice

Chicken kebabs threaded in skewer and grilled. Served with Tzatziki sauce.

    Chicken Souvlaki is a flavor rich goodness from Greece. An exciting grilled meal to enjoy from skewers served with; Creamy Delicious Tzatziki dipping sauce, some Olives, Salad and Pita Bread. You can enjoy it in two ways; one, straight from the skewer and the other option is to slide them off the stick and stuff them in pita with Tzatziki sauce.

    Chicken Souvlaki reminds us of Greece because Souvlaki is the other name for kebab in Greek.

    Soaking The Skewers

    Place the wooden skewers in a shallow pan of water to let them soak before grilling. Let them soak for at least 30 min.

    Chicken Marination

    The most important step in making the perfect Greek Souvlaki is nothing else but the marinade. For the traditional chicken Souvlaki, marinate the chicken to soak up all the wonderful flavors and then grill it to medium high temperature to get all crunchy, nicely colored and juicy. Marinate the chicken with olive oil, lemon juice, red chili flakes, salt & pepper, garlic, oregano and rosemary. Keep it in fridge for half an hour to allow the aromas to infuse the Souvlaki and give it the desired flavor.

    Threading In Skewers

    Pre-heat the grill to medium and thread the marinated chicken in skewers.

    Grilling

    Then put the skewers on the grill and flip them every 2-3 min until the internal temperature of the chicken reaches 165 F. Baste with oil once in between grilling. It will take around 10 min for it to be ready. Take it off the grill and serve it with hot pita bread .

    Method for Tzatziki Sauce

    Squeeze out all the excess water from the shredded cucumber. Then mix all the ingredients well. Keep it in fridge for an hour so the flavors are relieved and the yogurt gets firmer.

    Garnish the grilled chicken skewers with lemon juice & parsley .Then Serve with Tzatziki sauce, hot pita bread ,olives, sliced tomatoes and sliced onions.

    TIPS

    1- Make sure to grill it on a medium heat.
    2- Use boneless and skinless chicken for this recipe.
    3- 30 min marination is good but over night marination can give you enhanced flavors.
    4- Coat the grill grate with oil so the chicken does not stick on it.
    5- Make sure to watch the pita bread as they can char and burn quickly on the grill.
