2 Yellow Onions peeled, cut in half moon shaped
3 Tbsp Unsalted Butter
1 Tbsp Olive Oil
1 cup and 4 Tbsp Beef Stock
4 Boneless Pork Chops
1/2 tsp Kosher Salt
1/4 tsp Black Pepper
1/2 tsp Dry Thyme
1/4 tsp Garlic Powder
2 1/2 tbsp All-purpose Flour
4 slices Provolone Cheese
1 cup Gruyere Cheese
Fresh Thyme sprigs

Pork Loin is light pinkish pork meat that has a thin fat layer running over it. You can buy it: boneless or with bone. Boneless cooks faster and requires less work. We all know how much work there is in cooking pork.

I personally use the boneless one as it is easier to clean, cook, serve, and saves me a lot of time. I use yellow onions to make this Onion Pork Loin that always turns out amazing. You should try it as well.

Directions

Preheat oven at 400 degrees.

Add butter and olive oil to a skillet and add sliced onions. Saute for 5 minutes until soft.

Add the required tbsp of beef stock and cook.

Stir until onion turns golden brown.

Rub salt, Black pepper, thyme, and garlic powder to pork chops.

Add the sauteed onion to the plate.

Take the same skillet and add bit of olive oil if needed.

Add the pork chops in the skillet. Let the chops turn brown.

Add the onion in the pan add flour and mix well. Add the cup of beef stock into the pan and let it boil.

Add a bit of salt and pepper.

Add pork into the pan. Use a spoon to spread the beef stock on top of the chops.

Top with slices of cheese.

Take the pan and place it in the oven until cheese melts.

Spread beef stock on top of pork before serving. Add black pepper for garnishing.
