Ingredients

24 Tomatillos
8 Anaheim Chili
12 Serrano Chili
15 Garlic Cloves
3 Onions Large
2 Tbs Kosher Salt
1 Tbs Cumin
3 Tbs Olive Oil
1 Fresh Lime
3 Habanero Optional

Done

Peel out skin from tomatillos, onion and garlic and roast over an open flame until evenly charred. After that hot smoke it for roughly 20-25 minutes.

Add all smoked items along with salt, lime juice and olive oil to food processor until you get a smooth texture.

Pour mixture into sauce pan and simmer low for 20 minutes.
Recommendation:
Do two separate batches and add Habanero to one of them: Habanero Batch 1/3 ; Regular Batch 2/3

Add salt to taste and allow to cool.
You can use pressure cooker to Can/Seal them and then refrigerate them.
