Slow Smoking
Slow smoking is usually between 225-250 degrees. You can use around 20 charcoal in slow cooking. There is a procedure that can be helpful in smoking this way. It goes something like this:
Firstly, make 2 compartments in your smoker and fill one side with charcoal. The side with charcoal underneath will be used for direct heating while the other side without charcoal will be used for indirect heating. This way is mostly used for most bbq recipes.

Fast Smoking
This type of smoking is used to get the smoky flavor in the meat. It is cooked between 270-350 degrees and needs direct heat therefore, you need to lit up your chimney really well. So you may use 20-25 charcoal for fast smoking.
