Pre-heat the smoker to 225°F using hickory. |

Prepare the meat mixture (Ground Beef, Ground Pork, Panko Bread Crumbs, Red Onions, Eggs, Minced Garlic, Salt, Black Pepper, Green Chilis). Place half of the mixture on your slotted tray. Spread cheese evenly across layer. Top with rest of meat, pinching the sides to prevent cheese leaks. |

Mix the Sauce Topping (Ketchup, Brown Sugar, Yellow Mustard, Oregano, Steak Rub, Red Peppers) in a small bowl. Brush onto top and sides of meat. |

Smoke the meatloaf for approximately 4 hours until the internal temperature reaches 165°F. Let rest for 5-10 minutes before cutting to allow cheese to somewhat solidify. |
