Ingredients

1/2 Gallon Water
2/3 Cup Kosher Salt
1/4 Cup Brown Sugar
2 Tbs. Pickling Spice
2 Tbs. Granulated Garlic
2 Tbs. Whole Pepper Corns
1/2 Tsp. Cloves
1/2 Cinnamon Sticks
1/4 Cup Dijon Mustard
1/2 Cup Apricot Jam
1/4 Cup Stubs Moppin Sauce
3 Tbs. Whiskey Maple BBQ Sauce
To Taste Fresh Ground Black Pepper

Rinse of all spices and fill with pure water. Let sock 1 hour to overnight rinse.

Cover with Treager Beef rub. Smoke 2 hours at 180 °F.

Add half BBQ mixture to bottom of disposable aluminium pan. Place meet side down. Cover fat side with remaining mixture. Cover with aluminium foil.

Bake 6 plus hours 225-240 °F until you reach 195-200 °F internal temperature.
Let rest and cut against grain.
