Rinse of all spices and fill with pure water. Let sock 1 hour to overnight rinse. |

Cover with Treager Beef rub. Smoke 2 hours at 180 °F. |

Add half BBQ mixture to bottom of disposable aluminium pan. Place meet side down. Cover fat side with remaining mixture. Cover with aluminium foil. |

Bake 6 plus hours 225-240 °F until you reach 195-200 °F internal temperature. |
