1 1/2 lb Ground Beef
1/2 lb Ground Veal
2 Tablespoon Worcestershire Sauce
1 Medium Yellow Onion (Diced)
2, minced Garlic Cloves
1/2 Cup Fresh Chopped Parsley
1 Cup Panko Breadcrumbs
1 Large Egg
1/4 Cup Parmesan Cheese (Grated)
1/2 cup Mozzarella Cheese
1 Tablespoon Salt
2 Teaspoons Ground Black Pepper
To Rub Sweet Memphis BBQ Rub
To Brush On Neely's BBQ Sauce

A delicious BBQ smoked Meatloaf which is full of flavor and cheese. It is quite simple and delicious. Meatloaf is a glorious thing as it is much of a comfort food as any other dish out there.

Meatloaf is a blank slate, it adapts to any flavor profile. Regardless of the flavors you chose the main thing to focus on is that you have the main components right. Which are the correct blend of meat, breadcrumbs and eggs.

I am sure that you can have a baked meatloaf, but grilling it and adding some smoke to it is exotic. You get an amazingly tender meatloaf which is perfect for outdoor gatherings.

Now you can simplify your dinner plans with this fantastic BBQ smoked meatloaf using a couple key ingredients that pack a big flavor punch.

Beyond these core ingredients you can get very creative with what you put into your loaf.

In a large big bowl get your meats together . get your ground beef as well as your ground veal.

Next we are going to add our parsley, diced onions, Worcestershire sauce, garlic, Parmesan cheese, breadcrumbs, salt and pepper and egg.

Once you have all your ingredients in, mix them well with your washed hands.

When everything is mixed well take some plastic wrap and line it on your loaf pan.

Press in your meat mixture half way through, not too firm, just firm enough that it helps create the shape. Then add the mozzarella cheese by leaving 1/2 inch from the sides. Then add rest of the meat mixture.

Keep the pan in freezer for about 10-15 minutes to let the meat take the loaf pans shape.

Set The Grill

1. Mean while get your kettle grill set up for cooking between 325 and 350 degrees.
2. Place your hot briquettes on top of the cold ones.
3. Once the grill has reached 275 degrees we will open our bottom and top vents as required.
4. Cook your loaf on indirect heat.

Grilling

1. Take out your meat loaf from the fridge and give it some final touches by rubbing your Memphis sweet rub on all sides of the loaf.
2. Then place your meat loaf on the grill. Side wise add 2 apple wood chunks on your hot charcoals for the sweet, dense, fruity flavor.
3. Once the loaf is on the grill, spray some water from the Spray Bottle, which is going to add some moisture on the outside of the meatloaf.
4. Place your Digital Thermometer just down the middle of the meatloaf. Now cook the meat loaf for an hour and a half on 325 degrees.
5. After 1 hour 10 minutes take a look at your meatloaf and wait for the internal temperature to reach 145.
6. Then brush your loaf with BBQ sauce and let it grill until the internal temperature reaches 155 degrees. and the sauce caramelizes.

Serving

1. Take it off the grill and rest it for 15 min.
2. Combine ketchup and brown sugar. Brush it on the loaf while it is resting.
3. Slice it and serve it with your favorite side like mashed potatoes, fresh beans, sweet corns or whatever you prefer.

Tips

• You can use your go to sauce instead of BBQ if you like.
• You can also use cherry wood if Apple wood is not available.
