2 Chicken Breasts
1 tbsp Oil plus extra for frying
4 tbsp Mild chili sauce plus extra for drizzling
1/2 Lemon juiced
1/2 size Burger buns
250g Block lighter halloumi sliced into 8 pieces
1/2 Small cabbage finely sliced
2 tbsp Mayonnaise
4 tbsp Hummus soured cream and chive dip
4-8 Soft lettuce leaves
2 large roasted Red peppers from a jar drained and sliced

This BBQ Chicken Burger is the BEST Chicken Burger you will ever have! These are so delicious that even I, who doesn’t need chicken to survive, love them.

It’s a taste from heaven. Full of flavor. Melt in your mouth burgers for all BBQ lovers. These sticky burgers can easily be rustled up on a warm evening for last minutes BBQ.

BBQ Chicken Burger is delicious, served with Homemade Coleslaw, Corn on the Cob and Baked beans.

I cook my burgers in a pan more often but you can grill these burgers too. Just be sure not to use a super high heat setting as ground chicken can burn rather quickly.

You can use BBQ Sauce or your favorite store-bought variety.

If you can’t find ground chicken, you can make your own. Just add raw boneless, skinless chicken breasts, roughly chopped, to a food processor and pulse until it’s broken up and resembles ground meat.

At first put the chicken breasts between two pieces of baking parchment and bash with a rolling pin until 1cm thick. Then cut each into two even pieces.

Then heat two frying pans over a medium-high heat, heating the oil in one and fry the chicken in the oiled pan for 3-4 mins on each side until cooked through. Season. Reduce the heat, drizzle in the chili sauce and half the lemon juice and cook for 1-2 mins more until the sauce is reduced and remove from the heat.

And then while the chicken cooks, toast the buns in the dry frying pan for 30 secs. Transfer to a plate, then fry the halloumi in the pan (add a bit of oil if the pan is not non-stick) for 30 secs on each side until golden and toss the cabbage with the mayo and remaining lemon juice

Now spoon the hummus (or dip of your choice) into the toasted buns, then top with the rocket, chili chicken, halloumi and peppers and drizzle with a little more chili sauce, spoon over the cabbage, season with black pepper, and top with the bun lids.

Serve with any extra cabbage on the side, or a green salad.
